Soft and Buttery Honey Dinner Rolls

These soft, buttery, and delicious dinner rolls are the perfect addition to a home cooked meal. Perfect for cozy weekends in the fall and winter with a slow cooked stew or pot roast, these rolls are easy to make and the ultimate comfort food.

Equipment

  • 1 9" loaf pan, cake pan, or standard casserole dish.

Ingredients
  

  • cup whole milk
  • 3 tsp dry active yeast (about 12 grams)
  • 4 tbsp. honey
  • 8 tbsp. room temperature unsalted butter (one stick)
  • cups all purpose flour
  • 2 tsp. salt (about 10 grams)

Instructions
 

Assembly

  • Grease your pan with ample butter and preheat oven to 350°.
  • Start by warming 1 cup of the milk slightly to about 100 degrees.
  • Mix in the yeast, 2 tbsp. honey, and a ¼ of the flour to the warm milk and let stand for 15 minutes until bubbly.
  • In the meantime, mix together the flour and salt.
  • Once milk and yeast mixture is bubbly, add it to the flour mixture.
  • Mix together either by hand or in a stand mixer with a dough attachment. If it is too wet, add flour one tablespoon at a time. It should be smooth, elastic, and without loose pieces of dough.

First Raise

  • Drizzle a small amount of oil or melted butter over the dough, cover with plastic wrap, and let rise for approximately 1½ hours or until roughly doubled in size.
  • Remove dough from bowl, punch down, and knead into a small and workable dough. Weigh it out; it should be about approximately 750 g.

Dough Ball Assembly & Second Raise

  • Cut the dough into even portions of about 75 g, for ten dough balls.
  • Roll each dough portion into a small and elastic ball. Push the dough into an unfloured work table and roll into the back of your palm. Knead each dough portion slightly if there are loose bits you needed to add to make the weight an even 75 g. Make sure each dough ball has no loose bits and is smooth an elastic. If they are too dry to effectively roll and make come together, add a bit of milk.
  • Place each dough ball in your pan with a couple centimeters of space between each. The dish should be mostly full but with some space between each dough ball. Brush the tops with a bit of oil or melted butter, cover, and let rise for 1½ hours in a warm place or until doubled in size again.

Baking and Serving

  • While dough balls are rising, assemble the honey butter by melting four tbsp. of butter with 2 tbsp. of honey. Once melted, turn off heat and let sit on stove.
  • Next, beat one egg with ¼ cup milk for your egg wash.
  • Uncover your dough balls. They should be nicely raised and next to each other with no space in between. Brush them with the egg wash liberally until totally well coated.
  • Place in preheated oven and bake for approximately 45 minutes or until very nicely dark golden brown on top. Remove from oven and let cool for 15 minutes.
  • Brush with the melted honey butter generously and serve!
